Free Range Greshingham Duck

Duck is a great dish for serving when your entertaining. Score the skin with parallel cuts across. Season well and leave to room temperature. Lay the duck breast side down, on a rack over a roasting tray. Roast the duck for 3 hours in 120c fan oven while pricking again every now and then. Turn the oven up to 180c roasting for another 30 mins and resting for 10.
